Bulgur Pilaf


 Bulgur Pilaf with Green Lentils

Bulgur means boiled, dried, and cracked wheat grains. There are several sizes of bulgur. Maybe you know it already. With the medium size bulgur, we make salads, dolmas. With fine ones, we make kofte's or we add them in the soups. With bigger size bulgur you can make rice. This healthy and delicious rice is one of our favorites. You can add green lentils as I did with this recipe but you can also add chickpea or kidney beans.

Ingredients

  • 300gr. bulgur for pilaf, cracked wheat
  • 600ml. boiled water
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 250gr. green lentils, boiled and drained
  • 1 tbsp tomato paste
  • 1/2 tbsp red pepper paste
  • 1 clove of garlic, grated or fine chopped
  • 1 tbsp dried mint
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • Salt to taste
  • 2 tbsp of butter
  • 2 tbsp of sunflower oil

Preparation


  1. Brown the finely chopped onion with butter and seed oil,
  2. Add grated or fine chopped garlic,
  3. Add the tomato paste and pepper paste and keep stirring,
  4. Add bulgur grated carrot and drained green lentils in it,
  5. Add now the spices, keep stirring,
  6. Pour the boiling water into the bulgur mixture and combine all,
  7. Simmer for 15 minutes on low heat, with the lid on,
  8. Turn off the heat and let bulgur pilaf rest with the lid on for 20 minutes.
  9. Serve with yogurt and pickles. As a beverage, i should suggest Ayran, Turkish yogurt drink.
