Bulgur Salad
In the Turkish / Eastern market you can find two types of Bulgur. With the heavy Bulgur you can make rice / pilaf. And with the fine one you can make koftes or cold salads. Kisir is a cold Bulgur salad with all sorts of green herbs in it. This is an absolute wonderful side dish, that can really fill well.


  • 1 glass of fine bulgur (koftelik bulgur) 
  • 1 can of peeled tomato 
  • 1 tablespoon paprika paste (biber salcasi) 
  • 1 tablespoon olive oil 
  • 2 tablespoons pomegranate sauce (nar eksisi) 
  • Mint 
  • Flat parsley 
  • spring onion 
  • Salt 
  • Pepper 
  • Cumin 
  • Red dried pepper


Koftelik Bulgur & Paprika paste
  1. Mesh the tomatoes in a blender
  2. Place the bulgur in a large bowl and add the meshed tomatoes and 1 tablespoon of paprika paste 
  3. Stir well and put the lid on it. Let it be and wait 30 minutes until the bulgur grains are softened by the juice of the tomatoes
  4. After 30 minutes stir in the bulgur well
  5. Add the olive oil, pomegranate sauce and all the spices to your liking 
  6. Add the finely chopped green herbs to the kisir 
  7. Stir everything once more
