In the Turkish / Eastern market you can find two types of Bulgur. With the heavy Bulgur you can make rice / pilaf. And with the fine one you can make koftes or cold salads. Kisir is a cold Bulgur salad with all sorts of green herbs in it. This is an absolute wonderful side dish, that can really fill well.
Ingredients
- 1 glass of fine bulgur (koftelik bulgur)
- 1 can of peeled tomato
- 1 tablespoon paprika paste (biber salcasi)
- 1 tablespoon olive oil
- 2 tablespoons pomegranate sauce (nar eksisi)
- Mint
- Flat parsley
- spring onion
- Salt
- Pepper
- Cumin
- Red dried pepper

Koftelik Bulgur & Paprika paste |
- Mesh the tomatoes in a blender
- Place the bulgur in a large bowl and add the meshed tomatoes and 1 tablespoon of paprika paste
- Stir well and put the lid on it. Let it be and wait 30 minutes until the bulgur grains are softened by the juice of the tomatoes
- After 30 minutes stir in the bulgur well
- Add the olive oil, pomegranate sauce and all the spices to your liking
- Add the finely chopped green herbs to the kisir
- Stir everything once more
