Borek with cheese |
For this simple savory tart you need a kind of filo dough called: Yufka. You can usually find Yufka in Turkish or Middle Eastern shops. In Turkish cuisine it is often used. My wife always has some Yufkas in stock at home. For this Borek she uses Sac Yufka, which is the large round type. There is also triangular yufka, which she uses for a different kind of Borek called Sigara Boregi.
Ingredients

- 3 Yufkas
- 2 glasses of milk
- 2 eggs
- 3 tablespoons yogurt
- 100gr. melted butter
- 1 cup white cheese
- parsley
- 1 tbsp sunflower oil
- grated cheese
Preparation

- Remove the filo (Yufka) from the pack and let it breath for about 5 minutes
- Heat the oven at 180 degrees Celsius
- Tear the dough with your hands into pieces
- Mash the cheese with a fork
- Put eggs, milk, cheese, melted butter and yogurt in a large bowl and stir it
- Grease a large baking dish with sunflower oil
- Put the pieces of Yufka in the bowl with the mix and leave it to marinate,
- Put the pieces of Yufka into the dish one by one
- When you finished 1.5 Yufka this way, sprinkle the parsley on the damp pieces of Yufka
- Continue adding Yufka pieces until you are done
- Pour the remaining sauce in the dish on top of the Borek
- Sprinkle grated cheese on the borek to top it off
- Bake the borek in the oven at 180C for about 40 minutes
And you are done.
